Lamb and Gaminess

Many people I know love eating lamb but find the natural flavor, the gaminess, a bit overwhelming. If you fall into this category here are a few tips to help you enjoy it better.

Don’t wait till the last minute

One of the first things I suggest is plan ahead. Gaminess can be dulled to the point that it's not noticeable but doing so will take extra time.

Mild cover up

My first suggestion for mildly covering up gaminess is mixing in dried fruits. When the flavor from the fruits and the lamb blend you'll find a difference.

Dulling gaminess altogether

To truly dampen the gamy flavor do the following:

  1. Trim off as much fat as possible.

  2. Soak/marinate the meat for about 30 minutes in turmeric and lemon juice. If you're worried that's not enough time feel free to leave it sitting much longer. One of my customers soaked it over night before putting it on skewers for baking just in time for Shabbos and said it was out of this world.

  3. After soaking, rinse and put on the grill or in the oven.
